Pistachio Ice Cream with Berry Coulis

I love this quick way of putting flavour into ice cream. My favourite combination is pistachio with berry coulis. Use whatever you have on hand. Almonds, peanuts or walnuts work well too.


500 ml of a good quality vanilla ice cream

90g of unsalted pistachios

For the coulis:

300g of whatever berries you like (fresh or frozen)

1 tbs of caster sugar

Squeeze of lemon

30 ml of water


Soften the ice cream by placing it in the fridge, or if you’re in a hurry like me, on the bench.

Shell the pistachios and blend to a consistency you prefer. I like a little crunch so I have larger pieces.

Heat up a small pan. Add pistachios and heat for a few minutes until they’re fragrant. Take off the heat and leave to cool.

Add the pistachios to the ice cream and combine. Place back into the freezer to set.

In a small pot, heat up the water and sugar until the sugar has dissolved. Add the berries (halve if using fresh strawberries) and cook until softened. Add a squeeze of lemon and leave to cool.

Blend the berries until smooth and place in the fridge to cool.

Plating up

Place 2 scoops of the pistachio ice cream in a bowl and add a generous drizzle of berry coulis.
