Crispy Avocado

Ingredients

2 (just ripe) avocados

1 cup lemon juice

Egg wash

1/2 cup cornflour

1/2 cup plain flour

1 tbs turmeric powder

1/2 tsp smoked paprika

A pinch of cayenne pepper

For the crumb, combine:

1/2 cup panko breadcrumbs

1/2 cup tri-coloured quinoa

1/4 cup sesame seeds

Method

Remove avocado carefully from shell and slice lengthways, place into bowl of lemon juice to stop browning.

Sift flours, turmeric, smoked paprika and cayenne pepper into a bowl.

Dip avocado slices into flour spice mix, then into egg-wash, then coat with bread crumbs and quinoa mix.

Place on baking tray lined with baking paper, spray both sides with spray oil.

Bake in oven for 20 – 25 minutes until golden and crisp.

Serve with a good quality mayonnaise mixed with peri peri sauce.
