Pizza

The best thing about making your own pizza is that you can put together whatever flavour combination you like. I have two go-to-pizzas that I make regularly. Remember to take your dough out of the fridge half an hour before using.

Serves 2

Tomato, Olive and Basil

1 pizza dough

3 tomatoes

1 clove of garlic

1/4 brown onion

6 kalamata olives

9-10 basil leaves

2 tablespoons of tomato paste

A small handful of chopped flat leaf parsley

1 cup of mozzarella

Method

Preheat the oven and baking tray to 200 degrees.

I like to prep my ingredients first.

Prep: cut the tomatoes into thin slices and do the same with the onion. Peel garlic, wash and dry herbs, remove stones from kalamata olives and place in the fridge.

Take some flour and lightly dust the bench. Roll out your dough, continuing to dust the base in flour as you work it into your preferred size and depth. I like to go larger in diameter and thinner in crust.

Gently place your pizza base on the baking tray lined with paper. Add a tablespoon of olive oil and in circular motions with the back of the spoon spread over the base. Score the base with a sharp knife, running your lines down and across the dough. Bake for a few minutes until you see bubbles appear and then take the pizza base out of the oven.

Dollop on tomato paste and grate garlic onto the paste before mixing in a circular motion to cover the base evenly.

Using a circular motion, lay tomato slices, tear up basil leaves and arrange over the pizza with olives and onion. Add cheese evenly and scatter with parsley. Place back in the oven for at least 10 minutes and check every few minutes thereafter.

Cook until golden and bubbling. I prefer to cook mine a little longer so I get a mix of soft and chewy cheese.

Vegetarian Supreme

1 pizza dough

2-3 flat mushrooms

2 pineapple slices

6 kalamata olives

1/4 brown onion

1 clove of garlic

2 tablespoons of tomato paste

1/4 green capsicum

Small handful of chopped flat leaf parsley

1 cup of mozzarella

Method

Prep: Slice mushrooms, cut pineapple into small pieces, slice onion, peel garlic, and slice  capsicum into long strips. Place in fridge until ready to use.

Prep dough, pre-bake and cover base in tomato and garlic as above.

Arrange mushrooms over the base, add olives, pineapple pieces, capsicum strips, onion and top with cheese and chopped parsley.

Cook for 15 minutes, checking every few minutes until golden.

Once you start making your own pizza you’ll never want to order pizza again, ever!
