Seasoning adds layer and complexity to a salad. Tomatoes are a perfect vehicle for flavour. When in season, I look for ripe rubenesque tress tomatoes. They’re often the most juiciest which means I can use them as part of the salad dressing. To begin, I cut the tomatoes into wedges and place them in a serving bowl. I season well with sea salt and white pepper (you can use cracked black pepper) and leave to one side while I continue prepping the rest of the ingredients. When I’ve finished prepping, the seasoned tomatoes will be ready, bathing in their own juices.
